The bounciest coconut mango jelly you'll ever make

My girls have been amping up their after school snack intake these days, and it’s made me realize how quickly we’re going through packs of Cheeze-Its and pretzels. Not that I’m abolishing those from our house, but it got me brainstorming for ways to create more variety in their snack consumptions. Since summer is approaching, I started recalling snacks I enjoyed during the hotter months growing up in Taiwan. It consisted of a variety of jelly-type treats because they’re typically chilled. This led me to digging out the agar agar powder in our pantry.
Agar agar is a vegan alternative to gelatin - made with seaweed. It’s super versatile in that you can jellify any liquid of choice and it’ll turn into a bouncy solid! Depending on the ratio of agar agar to liquid, you can adjust the texture - from a pliable and soft texture to a more bouncy and solid texture. I decided to create a mango and coconut combination since mango is in season. I’ve made this same treat with coconut milk instead of coconut water - both are delicious and hits hard on a hot summer day!
